Introduction to the global gastronomy
Twenty years ago, the typical food connoisseur traveled France to find the latest culinary sensations. Today, food enthusiasts, foodist influencers jet around the world seeking for the latest hot spots of internationally acclaimed chefs. Over the past few years a subtle shift has taken place, a kind of ripple effect, that has intertwined European and North American cuisines, South American and Asian, Australian and North European… making it impossible to conceive one sort of cuisine, to truly understand it and inspire its evolution, without considering the others. Influences today, now more than ever, are impossible to unravel. Omnivore was the first to emphasize the importance of this phenomenon.
The concept of young cuisine
Founded in 2003 by Luc Dubanchet, journalist, Omnivore has been the spokesperson for a new generation. Chefs, who have not necessarily been awarded stars but, more importantly, share a strong culinary identity. They are creators of a cuisine that is extremely personal and innovative : a cuisine of authorship. Luc Dubanchet named it : The Young Cuisine. Born from a variety of influences and combined with a strong sense of savoir-faire, Young cuisine has become the common denominator of cuisines that were once considered completely separate from each other. Omnivore makes this Young Cuisine known all over the world, and accompanies this new generation of talents through creating links between chefs, individuals, and continents.
Omnivore World Tour
For twelve years now, the goal of the OMNIVORE WORLD TOUR is to create, in some of the largest cities in the world (Paris, Moscow, Istanbul, Budapest, Mexico…) events that will help people discover this network of chefs of the Young Cuisine. Omnivore has followed the evolution of food through its tendencies and styles, thanks to its series of unique masterclasses. It accompanies and invites the biggest names of French cuisine (Michel Bras, Pierre Gagnaire, Alain Ducasse, Alain Passard) and has given a voice to the great names of foreign cuisine (Albert and Ferran Adria, Heston Blumenthal, David Kinch, Andoni Luis Aduriz, Rene Redzepi, David Chang, and many others)
It’s this confluence of experiences, cultures, and styles that Omnivore has brought to the table. A place for impromptu meetings, exchanges, and communal experiences, the Omnivore World Tour continues to pioneer reflections on the appetite of cuisine.
